Derived from the local terms "VOA" and "Tsiperifery", the Voatsiperifery pepper means, among other things, the name of the fruit, and the name of the plant. The wild black pepper of Madagascar (or Voatsiperifery) is an endemic spice of the island. This spice is harvested on often inaccessible lianas, because these can be at a height of more than twenty meters. In Madagascar, the main harvesting places are in regions with the warm and humid climate of the Southeast.
From the scientific name "Borbonense Piper", wild pepper differs from the black pepper that we all know. Presenting a rod on the bay, it is the simplest way to differentiate them. The pepper used daily is called "Piper Nigrum". Voatsiperifery pepper is of a very rare variety and its culture is one of the most lucrative in Madagascar.
Did you know? To obtain a kilo of dried Voatsiperifery pepper, it will be necessary to pick a good ten kilos of fresh bays. In order to obtain the black color of the berries, they were picked while their colors were still green. Drying therefore allows the berries to wear this color and this method reveals an intense taste.
